Summer Salads that Shine

Summertime is here and we couldn’t be more thrilled! Longer days, shorter nights, vacations, road-trips, outdoor concerts, hammocks, and hiking are just a few of the things that get us psyched for this time of the year. Summer also gives us the opportunity to expand our salad bar with local fruits and veggies that we purchase each week at the Dane County Farmers’ Market. Having a healthy lunch or dinner is always great, but when the ingredients are coming from right here in Wisconsin it makes it just that much better!

This time of the year also means that we get to showcase two new seasonal salads that will be on the menu for the next three months. Our summer salads are the Ian’s Melon Salad and the Ian’s Asian Vegetable Salad.

The Melon Salad starts with mixed greens that get prepped fresh in-house each morning. We add in our fresh melon medley, which is comprised of watermelon, cantaloupe, and honeydew melon, and then top it off with tortilla strips. The recommended dressing for this salad is our housemade Cilantro Lime Vinaigrette.

The Asian Vegetable Salad starts with a romaine and cabbage blend. We then mix in a variety of marinated veggies, including carrots, red peppers, red onions, cucumber, zucchini squash, and yellow squash. The final addition is a handful  of wonton strips to give it a nice, slightly salty crunch. Our recommended dressing for this salad is our very own Korean Gochujang Dressing.

So Wiscons-IAN’s remember, we don’t hunker down and bear the harsh winter months so we can watch these months pass us by.  Grab one of these delicious Summer salads and embrace this time of year!
